Ingredients
  

  • 4 large Russet potatoes peeled and cubed
  • 2 cups Shredded cheddar cheese
  • 1 cup Heavy cream
  • ¼ cup Butter
  • 2 cloves Garlic minced
  • 1 tbsp Smoked paprika
  • to taste Salt
  • to taste Pepper
  • for garnish Chopped green onions
  • optional Bacon bits
  • optional Fresh herbs (thyme or rosemary)
  • optional Sour cream for serving

Instructions
 

  • Peel and cube the russet potatoes, then boil them in salted water for 10-12 minutes until just tender.
  • Drain the potatoes and let them cool for a few minutes.
  • In a saucepan, melt butter over medium heat. Add garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and bring to a simmer. Add shredded cheddar cheese and stir until melted and smooth.
  • Stir in smoked paprika, salt, and pepper to taste.
  • Place the cooked potatoes in a mixing bowl and drizzle the cheese sauce over the potatoes. Stir to coat evenly.
  • Transfer the mixture to a baking dish or an aluminum foil pan. Preheat your smoker or grill to 225-250°F (107-121°C).
  • Place the dish in the smoker and smoke for 45 minutes to 1 hour, or until the top is golden and bubbly.
  • Remove from the smoker and let it cool slightly. Garnish with green onions, bacon bits, or fresh herbs. Serve with a drizzle of sour cream if desired.

Notes

For a milder smoke flavor, use applewood chips. For a more intense flavor, try hickory or mesquite wood chips.
