Instructions
Preheat your oven to 400°F (200°C). Sprinkle salt and pepper evenly on both sides of the chicken breasts.
In a shallow bowl, combine the Parmesan cheese, breadcrumbs, garlic, and Italian seasoning. Mix well.
Brush each chicken breast with melted butter and olive oil. Dip each piece into the Parmesan mixture, pressing to coat well.
Heat a large oven-safe skillet over medium heat and add olive oil. Cook the chicken breasts for about 4-5 minutes on each side, until golden brown.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
Remove the chicken from the oven, let it rest for a few minutes, then garnish with fresh parsley and serve.
Notes
For a lighter version, you can substitute the butter with olive oil, and for a gluten-free version, use gluten-free breadcrumbs.
