Ingredients
  

  • Boneless, skinless chicken breasts
  • Chicken broth
  • Heavy cream
  • Parmesan cheese (freshly grated)
  • Garlic (freshly minced)
  • Italian seasoning
  • Crushed tomatoes
  • Spinach (optional)

Instructions
 

  • Place boneless, skinless chicken breasts into the Crock Pot. No need to cook the chicken beforehand—it will cook in the soup.
  • Add chicken broth and crushed tomatoes to the Crock Pot. Stir gently to combine.
  • Pour in heavy cream, add freshly minced garlic and sprinkle Italian seasoning. Stir to mix everything.
  • Cover the Crock Pot and cook on low for 6 to 7 hours, or on high for 3 to 4 hours.
  • Once the chicken is fully cooked, remove it and shred with two forks. Return the shredded chicken to the soup.
  • Stir in freshly grated Parmesan cheese and allow it to melt into the soup. Serve hot.

Notes

You can customize this recipe by adding extra vegetables like mushrooms, carrots, or zucchini. For a spicy version, add red pepper flakes or chopped jalapeños.
